Cashew Cream
This delicious cream is made from just two ingredients - raw cashews and water. It can be used as a substitute for dairy sauces and dips. I prefer to make it plain and then season it to my tastes, depending on how I want to use it. In the main picture it is topped with harissa (chili pepper sauce), I wanted a nice spicy sauce to top a rice dish I planned on preparing.
Ingredients
2 cups of raw cashews (this will not work if they are roasted)
1 1/2 cups of water
Steps
Soak the cashews in the water for two hours, they do not need to go longer than that. I soaked a little bit more than in the stated recipe, there was just a little that would be leftover in the bag, so I dumped them in and added more water.
Blend the cashews and water until nice and creamy, add more water if needed taking care not to add too much.
Season with just salt and pepper and used to top potatoes is yummy, but kick it up with herbs and lemon juice to make dip. You can use it on pasta or in the place of cheese on taco salad, I mixed in some nutritional yeast to give it a little cheesy flavor. I used the harissa topped cashew cream on top of a stuffed rice dish. Be creative, Iām sure you can come up with a variety of ways to use it.
