Broiled Rockfish with Lemony Potatoes, Olives, and Mint.
Friday nights are family dinner night and I do the cooking. My adult children, spouses and children only eat fish on Friday. I have a red meat allergy called alpha-gal (there is a much longer name) so I mainly eat seafood, poultry is great but I prefer seafood.
I get seasonal fish and shellfish from Sitka Salmon Shares out of Alaska. They are a CSA that I’ve been purchasing fish from for a couple of years (FYI - I am receiving no compensation for this endorsement). They have also hooked (pun intended 😝) hubby on fish. I grew up eating and loving fish, my grandfather drove a seafood truck, so it’s not surprising. Hub’s ate fried fish and shrimp willingly and barely tolerated fish cooked any other way. Well that has all changed, he thoroughly enjoys fish meals now; I think it is due to the quality of the fish, and some really good recipes.
