Butternut Squash Alfredo
Got these at Lidl’s (I do shop somewhere other than TJ’s).
Wasn’t sure what to do with them because I had never made them or any other vegetable “noodle” before.
I decided to go with Alredo sauce. I wanted something super simple and this one fit the bill perfectly The Best Homemade Alfredo Sauce Ever!
And it was the best I ever had (that I made myself).
Ingredients
16 oz. squash noodles (would probably work well with any vegetable noodle).
1/4 C. Olive oil
sea salt & papper to taste

Before I started the sauce, I preheated the oven to 400°F. Next, I drizzled olive oil over the butternut squash and tossed it to make sure there was oil on all of it. I place the squash on a cookie sheet and sprinkled with salt and pepper, then placed in the oven for 10 min.
While the squash was cooking I made the sauce (click on the link above for the recipe).
The sauce can be made in the time it takes for the “noodles” to cook. This is a really fast recipe.
