Almond Flour Banana Bread

Sunday dinners are always special to me and call for a little more effort, which usually means dessert. This Banana Bread fits the bill, although I think it is more like cake. 

Preheat oven to 350°F

  Ingredients 

2 C. Almond Flour

3 super ripe Bananas (the ones pictured were pulled out of the freezer and then defrosted. Freezing is a great way to put ripe bananas on hold and not letting them go to waste. Just peel and place in a freezer bag. Use to make pancakes, smoothies, banana bread, etc..).

2 Eggs 

1/2 Coconut Chips

1/2 C. Walnuts  

1/3 C. Stevia blend (or sweetener of choice) 

1 Tbsp. Coconut oil (or oil of choice) 

 2 tsp. Baking powder  

1/2 tsp. Salt

Mix ingredients thoroughly and place in baking dish. Don’t use one that is too large, you want one that is will be just about full to help the ingredients “rise” while baking.

Place dish on cookie sheet and place on top rack in oven. Bake for 1 hour or until completely set.
