My Best Almond Flour Bread

 

This is the best Almond flour bread I’ve ever made, it had some help from Cassava Flour (tapioca  flour). It can stand up to sandwich making. I modified the recipe I found on the back of the Cassava flour bag and doubled it.

 Ingredients 

8 eggs separated  

1 tsp. pure orange extract

2 tbsp. avocado oil or oil of choice

1 tbsp stevia or sweetener of choice

2 cups almond flour  

1 cup cassava flour

4 tsp. baking powder  

1 tsp. baking soda

1 tsp. sea salt

Pre-heat oven to 375°F. Oil 9 1/5 x 4 1/5 inch loaf pan.  

Beat egg whites till stiff, add yokes one at a time. Add orange extract and oil. Mix all of the dry ingredients then add to the egg mixture 1 tbsp at a time. Try not to over mix. 

Place batter into loaf pan and bake for 30 minutes.
